Being diabetic, I’m constantly making low carb/ low sugar treats. These 2 sweeteners are zero or 1 on the GI
Make sure the sweetener you use does not have added ingredients that can raise your sugars.
Substitute nuts and berries for any of your favourite. I use the low carb nuts usually.
If you don’t have moulds, pour into a tray & cut when it sets.
1/3 C Cacao Butter
1/2 C butter or Coconut oil
1/4 C blueberries, cut into bits
2 TBsp pistachios or almonds, chopped
1 TBsp yacon syrup (5 drops stevia or 1/2 tsp pure monk fruit sweetener)
1/4 tsp cardamom & pinch of saffron
Cut Cacao butter into pieces, melt by double boiling along with butter. Once it’s melted add berries sweetener, Cardamom & saffron. Mix well. Pour into chocolate moulds, sprinkle nuts on top. Transfer to the freezer. Remove from moulds once it sets and store in the fridge.
