Raspberry Avocado Pie

I had some over ripe avocados and thought it would be a shame to waste them. This recipe is a little taste of how I play with left overs! It is so much fun to look in my fridge & pantry and improvise. I managed to trick my sons into eating avocados. They don’t like them. How is that even possible? I told them this was a raspberry  tart.

I usually add 1 tsp of maca and lucuma powder to most of my desserts but this is optional. I do not use sugar as I am diabetic.  I limit desserts to weekends! I could not go a day without multiple desserts. I think because of limiting them, my body has adapted. I make myself a single serving and freeze the rest.

This pie does not need baking.

Ingredients:

(12 servings)
Crust:
1 C walnuts
1/3 C Coconut oil
1 date
1 tsp cardamom
Blend in a mixer and spread on a tray. Put this in the freezer while making the filling .
 
Pie Filling:
1 Avocado
1/4 C raspberries
1/4 C Coconut butter
1/2 lemon juice
2 Tbsp Coconut oil
1 tsp cinnamon
1 tsp Vanilla powder
1/4 cup sweetener
(I use 5 drops liquid stevia and 1 Tbsp yacon syrup or Non GMO Erythritol ).


Method:

Blend in a mixer and spread over crust. Store in the fridge.
